Ingredients
1. 200g dried spaghetti pasta (or other long pasta of choice)
2. 5 1/2 tbsp olive oil,
3. 300g seafood Marinara mix
4. 4 garlic cloves
5. 1 small red onion
6. 2 cups tomato passata
7. 2 tbsp finely chopped fresh parsley
8. 2 tablespoon Italian Herb mix
9. 1/2 teaspoon chili flakes
10. Parmesan for garnish
11. Salt to taste
12. Pepper to taste
13. 1 Chorizo (Optional)
Preparation:
1. Onion: Finely diced
2. Garlic: Finely diced
Method:
Ø Bring a large pot of salted water to boil.
Ø Cook pasta according to packet directions, reduce the cooking time by 1 minute.
Ø Reserve 1 cup of pasta water, then drain the pasta.
Ø Heat oil in a large skillet over high heat then add chorizo, garlic and onion. Cook for 3-5 minutes until onion is brown.
Ø Add tomato passata, salt & pepper. Low heat to medium high, bring to simmer and cook for 4 minutes.
Ø Then add the Italian herb mix and chilli flakes cook for another 2 minutes. Stirring occasionally.
Ø Add seafood, and around 1/2 cup of reserved pasta cooking water into the sauce. Toss gently and cook for 2 to 4 minutes or until the sauce has thickened and the seafood is cooked.
Ø Adjust salt and pepper to taste.
Ø Add the pasta to the pan and cook for another 2 minutes.
Ø Serve, garnished with fresh parsley and parmesan cheese
Note : I also made some parmesan cheese chips to go with the pasta
